Chocolate Chip Cookies

Seriously, who's to resist chocolate chip cookies..lolxx..tweaked a little part of the recipe found in the book by Hilaire Walden, Cookies-Irresistible biscuits, brownies and bars, as the cookies made from the original recipe was too soft

Ingredients
115g butter
40g light muscovado sugar
80g caster sugar
1 egg
1tsp vanilla essence
150g self raising flour
75g porridge oats
150g chocolate chips

Method
-Preheat the oven to 190 degrees.

- Cream the butter with the sugars in a bowl until pale and fluffy.

- Add in the egg as well as vanilla essence.

- Sift the flour over the mixture and fold in lightly with a metal spoon

- Add in the oats and chocolate chips, and stir until evenly mixed.

- Place small spoonfuls of the mixture onto greased baking trays, leaving space for spreading.

-Bake cookies for 15-20 minutes, until it begins to turn golden brown.

Nut and Chocolate Chip Brownies

Had some time on hand today, so i took out mummy's cookie recipe book, Hilaire Walden, Cookies-Irresistible biscuits, brownies and bars, and made brownies..turned out pretty well, and everybody loved it..muahahaha..

Ingredients
150g plain chocolate
120ml sunflower oil
200g light muscodovo sugar
2 eggs
1tsp vanilla essence
65g self raising flour
4tbsp cocoa powder
75g chopped walnuts
4tbsp chocolate chips

Method
- Preheat the oven to 180 degrees. Line an 8 inch square cake tin with greaseproof paper.

- Melt the plain chocolate in a heatproof bowl over a saucepan of hot water
(if you want an even sweeter brownie, use semi-sweet baking chocolate).

- With an electric whisk, beat the oil, sugar, eggs and vanilla essence together in a large bowl.

-Stir in the melted chocolate, then beat well until evenly mixed.

- Sift the flour and cocoa powder into the mixture and fold in thoroughly.
Stir in the chopped nuts and chocolate chips.
Pour the mixture into the prepared tin, and spread evenly to the edges.
Bake for 30-35 mins, until the top is firm and crusty.
Cool the baked brownie in the tin before cutting into squares.
