Had some time on hand today, so i took out mummy's cookie recipe book, Hilaire Walden, Cookies-Irresistible biscuits, brownies and bars, and made brownies..turned out pretty well, and everybody loved it..muahahaha..
Method - Preheat the oven to 180 degrees. Line an 8 inch square cake tin with greaseproof paper.
- Melt the plain chocolate in a heatproof bowl over a saucepan of hot water (if you want an even sweeter brownie, use semi-sweet baking chocolate).
- With an electric whisk, beat the oil, sugar, eggs and vanilla essence together in a large bowl.
-Stir in the melted chocolate, then beat well until evenly mixed.
- Sift the flour and cocoa powder into the mixture and fold in thoroughly. Stir in the chopped nuts and chocolate chips. Pour the mixture into the prepared tin, and spread evenly to the edges. Bake for 30-35 mins, until the top is firm and crusty. Cool the baked brownie in the tin before cutting into squares.
